Homemade Alfredo Sauce with Roasted Red Peppers and Mushrooms

If you're a fan of rich and creamy pasta sauces, you're in for a treat! Today, we're sharing a classic homemade Alfredo sauce recipe with a twist. With a handful of ingredients and a pinch of creativity, we'll show you how to make a delightful Alfredo sauce that's sure to impress your taste buds.

Ingredients:

  • 1/2 cup (1 stick) of butter

  • 2 cups of heavy cream

  • 2 teaspoons of minced garlic

  • 1/2 teaspoon of Italian seasoning

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of pepper

  • 2 cups of grated Parmesan cheese

  • 1 can of sliced mushrooms (drained) Fresh if you prefer

  • 1/4 jar of roasted red peppers, finely chopped



Instructions:


Step 1: Melt the Butter

In a large saucepan, melt the 1/2 cup of butter over medium heat. Stir it gently until it's completely melted, and you begin to smell that rich, buttery aroma.


Step 2: Sauté the Garlic

Add the minced garlic to the melted butter and sauté for about a minute. Make sure not to let the garlic brown; you want it to release its flavors without turning bitter.


Step 3: Add the Heavy Cream and Seasoning

Pour in the 2 cups of heavy cream, then add the Italian seasoning, salt, and pepper. Stir everything together to combine the flavors. Allow the mixture to simmer gently for 2-3 minutes, letting it thicken slightly.


Step 4: Incorporate the Parmesan Cheese

Gradually add the grated Parmesan cheese to the sauce. Stir continuously until the cheese melts and the sauce becomes wonderfully creamy and smooth. This should take about 5-7 minutes.


Step 5: Enhance with Mushrooms and Roasted Red Peppers

Now, it's time to introduce a twist to your classic Alfredo sauce. Fold in the drained sliced mushrooms and finely chopped roasted red peppers. These additions bring a delightful earthiness and a touch of sweetness to your sauce.


Step 6: Simmer and Serve

Simmer the sauce for an additional 2-3 minutes, allowing the mushrooms and roasted red peppers to absorb the flavors. Taste the sauce and adjust the seasonings, if necessary.


7. Cook Your Pasta

While your sauce is simmering, don't forget to cook your pasta. Fettuccine or linguine work wonderfully with Alfredo sauce. Cook them according to the package instructions, then drain.


8. Combine Pasta and Sauce

Once the pasta is al dente, combine it with your homemade Alfredo sauce. Toss the pasta gently in the sauce, ensuring each strand is coated generously.


9. Serve and Savor

I usually pair this with grilled shrimp or chicken. After plating the pasta I add my favorite protein on top along with any garnishes I decide to use. Adding Cajun Seasoning to the chicken really kicks up the dish a notch and adds another note of flavor.
